Easy Red Quinoa Recipes

Quinoa is a great addition to your diet if you want1 cup red quinoa
something healthy, nutritious and undeniably tasty.2 cups water
One of my favorite red quinoa recipes is the red6 radishes (diced)
quinoa and broccoli salad. For this recipe you will need:1 red onion (diced)
2 cups of cooked red quinoa1 large tomato (chopped)
1 small head of broccoli cut into very small florets¾ cup crumbled goat cheese
2-3 green onions (chopped)2 tablespoons capers (coarsely chopped)
6 oz of extra firm tofu (cubed)2 tablespoons fresh oregano (chopped)
1 clove of garlic (minced)For the dressing you will need:
2 tablespoons of cooking oil1 tablespoon Dijon mustard
1/4 cup sliced almonds or walnuts4 tablespoon red wine vinegar
Salt and pepper to taste1/3 cup olive oil
Heat the oil in a medium skillet and sauté theSalt and pepper to taste
garlic. Add the tofu and sprinkle salt and pepper. StirBring the water to a boil and put the quinoa, cook for
fry for about 3 minutes or until you see the tofu15 minutes or until the water is fully absorbed. Let
brown just a bit. Add the chopped broccoli and keepthe quinoa cool and toss the salad ingredients with it
cooking until it becomes tender. Turn off the heatexcept for the goat cheese. For the dressing, whisk
and in a separate bowl, combine the red quinoa, tofuthe mustard and vinegar until smooth, drizzle in olive
and broccoli and mix them together. Add the almondsoil and whisk it continuously until the mixture starts to

Another recipe that I like that's very easy to make isPour dressing over salad and toss. Top it with
