Colonel Sanders Lemon Sponge Pie


Notes:
This recipe came from a booklet Colonel Sanders put out in 1964. The wording is extremely choppy, but these are the Colonel's recipes. He did not include his Chicken Recipe in this booklet.

Ingredients:
3 Tbsp. Flour
3 Tbsp. Butter
1 1/4 C. Milk
1 1/4 C. Sugar
4 eggs, beaten separately
Pinch of Salt
1/3 C. Lemon Juice
Grated rind of 2 Lemons


Preparation:
Cream butter, flour, and sugar together. Fold in stiffly beaten egg whites. Pour into unbaked crust and bake slowly in oven 350 degrees for 15 minutes, and then reduce to 300 degrees for an additional 30 minutes or until the pie tests done.
