Simon and Seafort's Focaccia

Once again we have Mike Bartulis for his recreations of Simon and Seafort's recipes. Enjoy !

Ingredients:
2 LB. Bread dough
4 tsp. chopped fresh Rosemary
4 tsp. chopped fresh Sage
2 Tbsp. Olive Oil
1 tsp. Kosher Salt
1 Tbsp. chopped fresh Garlic
2 Tbsp. softened whole - Butter


Preparation:
Preheat oven to 375 F. Prepare your favorite basic bread dough, enough for a 2 lb. ball. Flatten the dough to approximately 1-1/2 inches thick. Lightly dust a sheet pan with flour. Lightly sprinkle the flattened dough with flour on both sides and place on the sheet pan. Brush the dough with olive oil and form to fit the pan.

Sprinkle the chopped garlic, salt and fresh herbs evenly over the dough. Rub the seasonings gently into the dough then lightly, with the tips of your fingers, place indentations throughout the dough.

Place the pan in your oven and bake for 20 to 25 minutes or until lightly browned. Remove and place on a wire rack to cool. Serve warm.
